So easy and so delicious! Pasta al Salmone (Pasta with Salmon) is the perfect quick meal for a weeknight.

  • 1/2 lb dry pasta (orecchiette, rotini, or your favorite)
  • 2 tbsp unsalted butter
  • 1/2 onion, chopped
  • 8 oz frozen peas
  • 2 small salmon fillets, skin removed, meat cut into 1" chunks
  • 5 oz sour cream
  • 1/2 c chicken stock or broth (you can use a buillion cube)
  • 1/4 c chopped dill, plus a few sprigs for presentation
  • 1/4 tsp salt, or to taste
  • 1/4 tsp black pepper

Boil pasta according to box directions. Separately, heat saucepan over medium heat. Melt butter and add chopped onions. Saute until clear, but not brown. Add chicken stock, sour cream, salt & pepper, peas, and salmon. Heat until salmon is cooked through - about 5 minutes. Toss in dill. Meanwhile, drain pasta and toss into large bowl. Pour salmon mixture over pasta and gently mix. Top with a few sprigs of chopped dill.
